Instructions

  1. Thaw the Fish Suya:
    • For best results, thaw the fish suya in the refrigerator overnight. This ensures even cooking and allows the spices to further penetrate the fish. If you’re short on time, you can also defrost it in the microwave using the defrost setting.
  2. Wrap the Fish in Foil:
    • Cut a piece of aluminum foil large enough to completely wrap each piece of fish.
    • Place the fish in the center of the foil, and wrap it securely to create a sealed pouch. This helps retain moisture and prevents the fish from drying out during cooking.
  3. Choose Your Cooking Method:
    • Grilling: Ideal for adding a smoky flavor to the fish.
    • Oven: Convenient and consistent cooking method.
    • Stovetop: Quick method using a grill pan or skillet.
  4. Grilling Instructions:
    • Preheat the Grill:
      • Set your grill to medium-high heat (about 375°F or 190°C).
    • Grill the Fish:
      • Place the foil-wrapped fish on the grill. Cook for 10-15 minutes, turning halfway through, until the fish is cooked through and flakes easily with a fork.
    • Serve:
      • Carefully open the foil packets and transfer the fish to a serving plate. Serve hot with sliced onions, tomatoes, and a sprinkle of extra suya spice if desired.
  5. Oven Instructions:
    • Preheat the Oven:
      • Set your oven to 400°F (200°C).
    • Bake the Fish:
      • Place the foil-wrapped fish on a baking sheet. Bake for 15-20 minutes, until the fish is cooked through and flakes easily with a fork.
    • Serve:
      • Open the foil packets and transfer the fish to a serving plate. Serve with your favorite sides and garnishes.
  6. Stovetop Instructions:
    • Preheat the Pan:
      • Heat a grill pan or skillet over medium-high heat.
    • Cook the Fish:
      • Place the foil-wrapped fish in the pan. Cook for 10-12 minutes, turning once, until the fish is cooked through.
    • Serve:
      • Carefully open the foil and transfer the fish to a plate. Serve hot with traditional sides or as desired.
