Instructions
- Prepare the Beans:

- Blend the Ingredients:
- In a blender, combine the thawed beans, red bell peppers, onions, and Scotch bonnet peppers.
- Add water gradually and blend until you achieve a smooth paste. You may need to do this in batches to ensure even blending.
- Mix the Batter:
- Pour the blended mixture into a large mixing bowl.
- Add vegetable or palm oil, tomato paste (if using), bouillon cubes, and salt to taste.
- Mix thoroughly with a cooking spoon, adding more water as needed to achieve a smooth, slightly thick batter. The consistency should be similar to pancake batter.
- Prepare the Steaming Containers:
- Cut pieces of foil or banana leaves to create small packets, or use ramekins for individual servings.

- Pour the moi moi batter into the prepared containers, filling them about three-quarters full.

- Seal the foil packets tightly, wrap the banana leaves securely, or cover the ramekins with foil.
